The solubilities of the protein ovalbumin in aqueous ammonium sulfate solutions ranging from 18 to 30 g ammonium sulfate/100 g water at 30 °C were determined for pH values in the range 4.58−5.4. A correlation of the data is presented which is estimated to predict solubilities within ±5%.
