高齢者で咀嚼しにくいたくあんを試料として,皮の加工のもたらす力学特性,および咀嚼負担の変化を機器測定と咀嚼筋筋電位計測により検討した.機器による測定から,破断強度は各々の試料間で有意な差が認められ,皮切れ目で最も小さな値を示した.咀嚼筋筋電位計測の結果からは,若年者と高齢者の咀嚼の特徴の違いをみることができ,高齢者は,筋電位振幅,筋活動量の低さを咀嚼回数,咀嚼時間を増やして対応していると考えられた.加工方法の違いによる咀嚼負担の相違については,無加工のものと比較して皮無しで,咀嚼回数,咀嚼時間,筋活動時間,筋活動量が有意に小さな値を示し,今回の試料の中で最も咀嚼負担の少ない加工方法であると考えられた.皮に切れ目を入れたものも,無加…
